Hearts of Palm Ceviche
There is a whole lot of flavor in this fish free version of Ceviche. It’s a perfectly delicious snack for this Summer heat. It’s an easy and simple recipe that requires absolutely no hot oven or stove to deal with. With just a little chopping you’ll hopefully be enjoying this outdoors or poolside in no time.
Serves 3-4
Ingredients
14oz (400g) Hearts of Palm, drained and diced
1/2 Yellow or Red Tomato, diced
1-2 Jalapeños, seeds and membrane removed and finely diced (depending on your heat preference)
1/3 cup (about 50g) Red Onion finely chopped
1/2 Avocado cut into small cubes
1/3 cup (5-6g) fresh chopped Cilantro or more to taste
Juice of a Lime
Juice of an Orange
Juice of 1/2 a Lemon
Salt & Pepper to taste
Serve with:
Plaintain or Tortilla Chips
Directions
1. In a large bowl add the chopped hearts of palm, red onion, jalapeño, tomato, avocado and cilantro and mix well.
2. Combine the citrus juices, salt, pepper and mix well. Pour over the mixture.
3. Refrigerate for at least 30 minutes - 1 hour to let the flavors blend.
4. Serve with plantain or tortilla chips.
