Roasted Chipotle Salsa
This salsa has a deliciously smoky flavor with a slight heat from the chipotle peppers. As with any salsa, you can adjust the heat to your liking by adding more peppers! It’s easy to make with just a few fresh ingredients and the chipotle peppers in adobo sauce give it a nice complex flavor. Finally, the addition of chopped fresh onion compliments the roasted flavors and adds a contrast of textures. It’s a great snack with tortilla chips or a condiment to any meal you would add salsa to.

Serves 4-6
Ingredients
1 lb (454g) Roma Tomatoes
1 medium Onion
4 cloves Garlic, unpeeled
1-2 Chipotle Peppers in Adobo Sauce
1/2 cup (25g) small bunch of Cilantro
1 medium Lime juiced
1/4 tsp Salt or to taste
Optional: 1 1/2 Tbsp (23g) finely minced Red Onion
Directions
1.Slice the tomatoes and onion in half and place them cut side down on a lined baking sheet. Add the unpeeled garlic cloves and broil at 425 for about 10-15 minutes or until there is a nice char.
2.Allow the vegetables to cool enough to handle and add them along with the peeled garlic to a food processor or blender.
3.Add in the salt and pulse everything until combined. Add in the chipotle pepper(s), lime juice and cilantro before pulsing until desired consistency. Check for seasoning and add more salt or lime juice if needed.
4.Pour salsa into a bowl and add the finely minced red onion and mix well. Serve with tortilla chips for a snack or use it on a variety of meals.
