Garlic Miso Roasted Potatoes
What a delcious flavor combo of Garlic and Miso! These are crispy and so flavorful and perfect for dinner or brunch! The Miso adds a slight sweetness and perfect Umami taste. Make them with any variety of Potato.
Serves 2 -4
Ingredients
3 Large Red Potatoes ( 4 cups cubed)
4 - 6 Garlic cloves finely chopped
1 1/2 Tbsp of Mellow White Miso ( I really like Cold Mountain Miso)
2 Tbsp of Vegan Butter melted
2 tsp of Grape Seed Oil
Salt & Pepper to taste
2 Tbsp of chopped Parsley
Maldon or large flaked Salt to finish
Directions
1. Mix together the Garlic, Miso, Butter, Oil, Salt & Pepper
2. Cut the Potaotes into 1 1/2 “ ish cubes and toss them with the Garlic Miso mixture
3. Lay the coated Potatoes on a sheet pan and Bake them at 350 for 40 - 45 minutes or until the Potatoes are fork tender. Flip once half way through cooking time
4. Top with chopped Parsley and Maldon Salt
