Miso Butter Roasted Radishes
I love roasting vegetables because it not only gives them a wonderful smokiness but brings out their sweetness. I will often just roast with a drizzle of Oil, Salt & Pepper but I’ve been on this Miso Butter kick lately and for good reason, it’s just so yummy! Radishes are known for their peppery bite and are typically eaten raw but have you ever roasted them? They become these little delicate and delicious morsels that I usually gobble up as is! They go wonderfully as a side to a main dish but also try adding them to soups like Ramen or as part of a vegetable stir fry.
Serves 3-4
Ingredients
24 oz ( 640 g) Radishes ( I used Easter Egg)
2 1/2 (37.5 g) Tbsp of Vegan Butter ( I like Miyoko’s)
1 1/2 (22.5 g) Tbsp Miso Paste ( I use Cold Mountain Miso)
1 tsp (5 ml) Toasted Sesame Oil
1 tsp (5 ml) Soy Sauce
2 tsp (10 ml) Mirin
2 tsp (10 ml) Rice Vinegar
1 tsp (5 g) Garlic Powder
Salt & Pepper to taste
Green onion chopped
Sesame Seeds for garnish
Directions
1. Prep the radishes by giving them a good wash and trimming away any roots or greens. Cut them into halves and larger ones into quarters.
2.Melt the butter and whisk it together with the miso paste, sesame oil, soy sauce, mirin, rice vinegar, garlic powder, salt & pepper.
3. Toss the radishes with the miso butter mixture and place them in one single layer onto a baking sheet or large baking dish.
4. Bake at 400 for 10 minutes, flip and continue roasting for another 10 - 15 minutes or until nice and browned.
5. Serve with chopped green onions and sesame seeds.
