Easy Spaghetti and Meatballs
Easy can also be called “Lazy”. It’s how I describe a recipe that involves a little bit of cooking and a lot of help from some ready made items. It’s definitely easier thanks to a wide variety of ready made Vegan Metaball options. I usually make my own from Beyond Burger but sometimes it’s nice to just throw some ready made balls into your sauce. I found some Vegan Meatballs at Aldi and decided to give them a try.
The sauce will serve 4 -6
Ingredients
8oz of Spaghetti, Linguine or Fettucine ( I willsometimes combine them in order to finish up a pacakge)
1 package of Vegan Meatballs ( I used Aldi brand but I also like Gardein when not making my own)
1 can of Organic diced Tomatoes
1 can of Organic Tomato Sauce
4 cloves of Garlic
2 Bay Leaves
1 tsp of Oregano
1 tsp of Onion Powder
pinch of Red Chili Flakes
2 Tbsp of Grapeseed Oil
2 tsp of Aged Balsamic Vinegar
1 Jar of Alla Norma Sauce with Egglplant from Alessi
1 can of Organic Mushrooms
Vegan Parm and Fresh Parsley for topping
Salt & Pepper to taste
Directions
1. Sauté the Garlic on low heat until lightly browned
2. Add in the Spices, Bay Leaves and Mushrooms. Continue to cook for a few minutes before adding in the diced Tomatoes
3. Raise the temp to medium - low and add in the Tomato Sauce, Balsamic Vinegar as well as the Jar of Sauce
4. Cover the pot and let simmer for 25 -30 minutes
5. Add in the Meatballs and continue to cook for 10 - 15 minutes while you cook the Pasta
6. Serve with plenty of Vegan Parmesan and fresh Parsley
