Chic Pea & Veggie Chowder

This soup is hearty, satisfying and oh so comforting! It has great flavor and lots of colorful veggies. It’s really easy to make and is perfect for warming up with. Serve with Bacon-Un Bits and Croutons or a Crusty Bread.

Serves 4 -5


 
 

Ingredients

1/2 Small Onion

2 Cloves of Garlic

4 Ribs of Celery

3 Medium Carrots

1 can of Chic Peas or Garbanzo Beans

4 Small Yellow Gold Potatoes, peeled and chopped

1 cup of Frozen Sweet Corn

1/2 Red Bell Pepper chopped

1/2 tsp of Garlic Powder

1/2 tsp of Onion Salt

1 tsp of Old Bay Seasoning

1 Tbsp of Fresh Thyme

2 Tbsp of Fresh Dill

3 Tbsp of Nutrional Yeast

1 cup of Unsweetened Plant Milk

4 cups of Water

Salt & Pepper to taste

Directions

1. Sauté the Onion, Garlic and Celery until the Onions are translucent.

2. Add in the Potato, Carrots, Chic Peas Thyme, Dill and Old Bay Seasoning and continue to cook on med-low heat

3. Add in the frozen Corn, Red Bell Pepper and Water. Season with Salt & Pepper and let simmer for about 15-20 minutes or until the Potatoes are tender.

4. To help thicken the Soup, blend about a cup of the Soup making sure to get mostly Potato along with 1 cup of Plant Milk, Nutritional Yeast, Garlic Powder and Onion Salt and add it back to the pot of Soup

5. Mix well and check for seasoning. Let simmer another 20 minutes before serving

6. Serve with Croutons, Bacon-Un Bits or Bread
