Caramelized Onion Dip

This delicious Onion Dip makes the perfect snack with or without a party! It’s super creamy and so full of flavor. The Caramelized Onions may take some time to make but the complex and rich flavors they add are so worth the effort.

Serves 4


 
 

Ingredients

2 large Yellow Onions (about 600g) cut in half lengthwise (root to top) and then sliced relatively thin (about 1/4” thin)

1 Tbsp (15ml) of Oil (I use Avocado)

1 Tbsp (15g ) of Vegan Butter

12 oz (332ml) Vegan Sour Cream

1/4 cup (30g) Vegan Cream Cheese

1 tsp of (15g) Onion Powder

1/2 tsp (7.5g) of Garlic Powder

1 Tbsp (15 ml) of Light Soy Sauce or Tamari

Salt & Pepper to taste

Equipment:

med/large pan with high sides (you want your onions to touch or even be slightly crowded which will help keep them moist)

Directions

1.Caramelize the onions by warming the butter and oil together in a large pan with high sides on med low heat.

2. Add the onions in a handful at time. Give the onions a few minutes to start cooking before adding the next handful. Mix the onions to coat them well with the butter/oil and add a pinch of salt.

3.Continue cooking stirring occasionally for about 40 - 60 minutes. If onions become dry or begin to stick add about a tbsp or two of water or broth to deglaze the pan (remove the sticky bits) The onions should be dark golden in color. If the onions are browning to quickly lower your heat.

4. Allow the vegan sour cream and vegan cream cheese to come to room temperature. Mix in the onion powder, garlic powder and soy sauce.

5. Add the cooled caramelized onions and mix well. Season with salt & pepper and let stand for 15 - 20 minutes for the flavors to blend. Note: Can be made ahead and refrigerated. Allow dip to warm a bit before serving.

6. Top with chopped chives and serve with chips, crackers or cut veggies.
