7 Layer Dip
This is the perfect party dish, think Cinqo de Mayo or Super Bowl. It’s stacked with all the classic layers and most can be made with pantry staples. Serve with tons of tortilla chips and cold cervezas!
Serves 6 -8
Ingredients
16oz can (454g) Vegan Refried Beans mixed with 2 tsps (10g) Taco Seasoning
1 1/2 cups (375g) Vegan Sour Cream (I like Tofutti Brand)
Guacamole made with 2 Avocados, mashed, Juice of 1 Lime, 1/4 tsp or more to taste Salt & 1/4 cup chopped Cilantro. Mix together.
1 1/2 cups (375g) Salsa of choice
2 cups shredded Iceberg or Romaine Lettuce
1 1/3 cups (150g) grated Vegan Cheddar Cheese
1 Tomato, seeded and chopped
Optional Add-ins:
2 Green Onions sliced
1/3 cup (50g) sliced Black Olives
Pickled or fresh Jalapeños slices to taste
Directions
Starting from the bottom in a large bowl or glass dish, layer:
1. Spread out the refried beans.
2. Layer on the vegan sour cream.
3. Add and spread out the guacamole.
4. Spread a layer of salsa.
5. Add a topping of shredded lettuce.
6. Top with the grated vegan cheese.
7. Lastly sprinkle on the chopped tomatoes.
BONUS LAYER
Layer on sliced green onions, black olives & jalapeños.
Serve with plenty of tortilla chips.
