Vegan Jambon Buerre
This vegan take of the French inspired jambon beurre (ham & butter) sandwich is not only easily veganized but has a delicious twist. The butter used for the base of the sandwich is a pickle butter! It’s slightly tangy, herby and just brilliant! The recipe will feed two people easily but use an entire baguette for more. The components are simple, pickle butter, dijon mustard, plant based ham and a fresh baguette. If you have an aversion to pickles and / or mustard, feel free to keep the sandwich classic with simplpy vegan butter & ham.
Serves 2-4
Ingredients
1/2 large Baguette
4-5 Vegan Ham Slices ( Prime Roots)
Dijon Mustard
Pickle Butter
Pickle Butter
8 Tbsp (113g) Salted Vegan Butter, softened ( I used 1/2 stick of Miyoko’s)
1/3-1/2 cup (75g) Cornichons or Gherkins, chopped
1 Tbsp (3g) chopped Chives
1 Tbsp (3g) chopped Dill
1 Tbsp (15ml) Pickle Brine
Salt & Pepper to taste
Directions
1.Make the pickle butter by combining softened vegan butter with chopped cornichons, fresh herbs, pepper, pickle brine and salt if needed. Once mixed well set aside.
2.Cut the baguette in half and then lengthwise. Spread a generous amount of the pickle butter on one side and a thick layer of dijon mustard on the other.
3.On one side, layer on the slices of vegan ham slices and close the sandwich. Cut into 2-3 pieces and enjoy!
Refrigerate any unused pickle butter in an airtight container for 7-10 days.
