Shrimp Po Boy

So history has it that the po-boy was invented by the Martin brothers, Benny and Clovis, to feed striking streetcar drivers in New Orleans in 1929. Typically served with meat or often seafood this version is completely Vegan and super delicious! The most distinguishable features are the crusty french bread and a mayo based sauce called a Remoulade that is tangy with a hint of spice.

Makes 2 sandwiches


 
 

Ingredients

1 package of Vegan Shrimp ( I use All Vegetarian Inc) roughly chopped

2 French Rolls or small Baguette cut in two

1 1/2 cups Shredded Lettuce

6 slices of Tomato seasoned with Salt & Pepper

Sprinkle of Old Bay & Cajun Seasoning

1 cup Cornstarch (mixed with 1 tsp of Cajun Seasoning, 1 tsp of Old Bay, Salt & Pepper to taste)

1/4 - 1/3 cup plus Grape Seed Oil for frying (depending on the size of your pan)

Remoulade Sauce

2/3 cup Vegan Mayo ( I use Vegenaise from Follow Your Heart)

1 Tbsp of prepared Horseradish

1 Tbsp of Lemon Juice

2 tsp of Dijon or Creole style Mustard

1 Tbsp of Capers roughly chopped

2 tsp of Caper brine or Pickle Juice

2 tsp of Hot Sauce

1 tsp of Cajun Seasoning

1 tsp of Smoked or Sweet Paprika

Salt & Pepper to taste 

Note: For more of a batter type coating use 1/2 cup Cornstarch and 1/2 Flour with the same seasonings

Directions

1. Mix together the ingredients for the Remoulade and refrigerate until ready to serve (can be made the night before)

2. Add the Salt, Pepper, Cajun and Old Bay seasonings to the Cornstarch and mix well

3. Season the Shrimp with a little bit of Old Bay & Cajun Seasoning, Salt & Pepper

4. On med heat, in a cast Iron pan or Dutch Oven style pot heat the oil until a little bit of cornstarch sizzles when added

5. Dredge the Shrimp through the Cornstarch and add a few pieces to the hot oil at time

6. Let the Shrimp cook in the oil for a few minutes before carefully turning over to continue cooking or becoming golden brown (about 2-3 minutes on each side)

7. Drain the cooked shrimp on a paper towel

8. Make the Po Boys by spreading some the Remoulade on the roll, add the slices of Tomato and shredded Lettuce and about half of the fried Shrimp

Serve with Potato Chips or French Fries
