Vanilla Bubble Coffee
This fun and refreshing drink is filled with bubbles or little balls of tapioca also called pearls or boba. Bubble or boba drinks originated in Taiwan and typically consists of tea, milk, sugar and boba. This version is a twist on that drink made with iced coffee.
The boba or bubbles are slightly sweet from the added brown sugar and have a deliciously chewy texture. The flavor possibilities are endless and open to your creativity. This recipe uses a plant based creamer for extra creaminess, but can easily be made with any type of plant milk.
Serves 1-2
Ingredients
1/3 cup (60g) + 1 Tbsp (10g) large Tapioca Pearls / Boba
1 Tbsp (15g) Brown Sugar (cane or coconut can also be used)
1/2 tsp (2.5ml) Vanilla
1 3/4 cups (413ml) brewed Coffee, chilled
Ice Cubes
Vanilla Plant Based Creamer to taste
Coffee or Tea?
If you prefer tea over coffee then just swap a strongly brewed tea. Make sure it’s been properly chilled before assembling the drink.
Directions
1.Brew the coffee to the strength you prefer. Add in the vanilla and allow it to cool before chilling properly in the refrigerator.
2.Bring a pot of water to boil. Add the dry boba pearls to the water and boil until they float on top. Cover the pot and lower the heat to medium. Continue to cook for another 3 minutes. Turn off the heat and allow to residually cook for another 3 minutes (or cook to package directions).
3.Remove the pearls from the hot water and add them to a bowl of ice water. Allow them to sit for 1-2 minutes before draining. Add the strained tapioca pearls to a dry bowl and mix with the brown sugar until well coated. Set aside until the sugar has fully dissolved.
4.Make the drink by adding ice cubes to a glass, then the boba. Pour over the desired amount of coffee and finish with creamer or milk.
