Horchata Rice Pudding
This is a lovely take on the classic creamy dessert, rice pudding. I adore it, it’s creamy, sweet and oh so comforting! I actually have two other variations here on the site. It’s so easy to make and so nostalgic. The horchata adds a luscious creamy cinnamon flavor and a bit of depth to the pudding. If you can’t find the vegan horchata drink then use all plant milk of your choice with a cinnamon stick or two. It’s a delicious dessert that’s ready in under an hour, and can be enjoyed warm or chilled.
Serves 4
Ingredients
1 cup (200g) Arborio Rice
2 cups (240ml) Horchata Rice Drink (I used Rice Dream)
2 cups (240ml) any Plant Milk plus 1/2 cup (85ml)
1/4 cup (50g) Cane Sugar
1/4 tsp Salt
1/2 tsp (2.5ml) Vanilla Extract or Paste
Cinnamon to garnish
Note:
If you prefer your pudding on the looser side then you can mix in 3/4 cup of plant milk before serving.
*If you cannot find the horchata rice drink then use all plant milk and add a cinnamon stick to the pot while cooking along with an additional 1/4 cup cane sugar.
Directions
1. Add the un-rinsed rice to a large pot along with the sugar and salt. Add in the horchata drink and 2 cups of the plant milk and stir.
2. Set the pot on medium high heat and bring the rice mixture to a boil. Once it’s boiling lower the temperature to low heat and cover. the pot. Allow the rice to cook at a simmer for 30 -40 minutes , stirring occasionally to prevent sticking.
3. Once the rice is tender and has absorbed the majority of the liquid remove from the heat. Add in the vanilla and mix well. Allow the rice pudding to cool and then refridgerate until ready to serve.
4. Add the remaining 1/2 cup of plant milk and mix until the pudding has loosened. Serve with a dash or two of cinnamon.
