Tabbouleh sometimes called Tabouli is a Lebanese vegetarian salad made mostly of finely chopped Parsley. Other ingredients include chopped Veggies and Mint. It’s seasoned simply with Olive Oil, Lemon Juice, Salt & Pepper. It can be found as part of a Meze platter along side Falafel, Hummus Dolmas and Babaganoush. It also makes a delicious light snack on its own served with fresh Pita, Romaine leaves or Pita Chips.

Serves 4-6


 
 

Ingredients

3/4 cup Bulgur Wheat

1 3/4 cups boiling Water

1 cup Tomatoes seeds removed and chopped

1 cup Cucumber seeds removed and chopped

1 1/2 cups (1 large bunch) Parsley finely chopped

1 cup or one bunch Mint finely chopped

2 Green Onions finely chopped

1/3 cup good Olive Oil

Juice from 2 Lemons

Salt & Pepper to taste

Directions

1. Add the Bulgur to a large bowl and cover with boiling water. Let it sit for 25-30 minutes to soften and absorb as much liquid as possible.

2. Remove the seeds from the Cucumber and Tomatoes and chop them into smallish pieces about 1/4-1/2 ” in size

3. Salt the Cucumber and Tomatoes and let them sit as you chop the Parsley and Mint. Drain off any of the water that has been drawn out.

4. Drain the Bulgur very well and add it to the bowl with the chopped Cucumber and Tomatoes.

5. Add in the finely chopped Parsley, Mint and chopped Green Onions and mix well.

6. Dress with the Oilive Oil and Lemon Juice then season with Salt & Pepper. Mix well and let the Tabbolueh sit for about 15-20 minutes before serving.
