Roasted Asparagus with Lemon Sauce

A favorite way to prepare Asparagus is to give it a roast with a bit of Oil, Salt & Pepper. It brings out so much flavor and makes them tender and juicy. I think they’re absolutely delicious just like that but for an added burst of flavor I like to serve them with this tangy Lemon Dill sauce.

Serves 4


 
 

Ingredients

2 bunches of Asparagus

1 1/2 Tbsp Grape Seed Oil

Salt & Pepper to taste

Lemon Dill Sauce

4 Tbsp of Vegan Mayo ( I use Follow Your Heart Vegenaise)

2 Tbsp of chopped Dill

2 tsp of Capers with brine

1 Tbsp of Lemon Juice

Zest of 1 Lemon

1/4 - 1/2 tsp Onion Powder (to taste)

1/4 -1/2 tsp Garlic Powder (to taste)

1/2 tsp Dijon Mustard

Salt & Pepper to taste

Directions

1. Make the sauce by combining all of the ingredients and mixing well. Set aside.

2. Trim the Asparagus by cutting about 2 -2 1/2 “ off the woody ends or where the white part just meets the more tender green. (Another method is to hold the very end and snap it apart. The Asparagus will naturally break after the woody part.)

3. Lay them onto a baking sheet in a single layer and drizzle with Oil. Season with Salt & Pepper. Roll them over a few times to make sure everything is well coated.

4. Bake at 375 for 15 minutes or until tender.

5. Let the Asparagus cool a bit and serve with the Lemon Dill sauce.
