Sushi Bowl
All of the yummy ingredients in a delicious Vegetable Sushi Roll but in a bowl. There’s something a little extra comforting about a bowl of warm rice and fresh veggies. These Sushi Bowls can be made with any variety of Veggies you have. Customize the protein by keeping the Tofu raw or pan frying it. You can switch it up by choosing Tempeh or Edamame (soy beans).
Serves 2
Ingredients
1 1/2 cups cooked Rice
8 oz (227 g) Tofu ( I used Silken)
small Cucumber sliced and quartered
1 cup fresh Sprouts
1 Avocado sliced
6 -8 sheets of Seaweed Snacks
Serve / garnish with:
Sesame Seeds
Miso Mayo dressing ( you can sub a bit of Vegan Mayo mixed with Miso Paste and a splash of Rice Vinegar)
Soy Sauce
Pickled Ginger
Directions
1. Split the ingredients between both bowls and assemble in rows.
2. Serve with Sesame Seeds, Pickled Ginger, Soy Sauce and Miso Mayo.
