Roasted Tomato Orzo Soup w/ Feta
Fresh tomatoes, basil and oregano, what better way to celebrate the flavors of Summer ? Add in orzo and feta making it all rich and creamy and now we are talking! I am one of those people that will eat soup in 90 degree weather and since we are still in full Tomato season, making this recipe was a simply delicious decision. Craving this recipe in Fall or Winter? No worries, you can enjoy this easy to make soup year round thanks to pantry staples like canned Tomatoes!
Serves 4
Ingredients
8 medium sized Tomatoes (I used a combo of Roma & Vine) You can sub 28 oz canned Tomatoes
1 1/4 cups (163 g) Onion chopped
6 cloves of Garlic minced
6 cups (1,425 ml) of Vegetable Broth
1 Tbsp (15 g) of Miso Paste ( I use Cold Mountain Miso )
3 Tbsp (45 g)chopped fresh Oregano
3 Tbsp (45 g) chopped fresh Basil
2 tsp (10 g) of dried Thyme
1 cup (90 g) Vegan Feta crumbled (I like Follow Your Heart or Violife)
1 cup (168 g) Orzo uncooked
3 Tbsp (45 ml) neutral Oil
Salt & Pepper to taste
Garnish:
Additional chopped Basil & Oregano

Directions
1. Cut the tomatoes in half or quarters and place on a well lined baking sheet cut side up. Drizzle with about 1 Tbsp of oil and season with thyme, salt & pepper. Bake at 425 for 40 - 50 minutes or until thoroughly cooked. set aside.
2. When the tomatoes are done, sauté the onions in 2 Tbsp of oil until translucent. About 3-5 minutes.
3. Add in the roasted tomatoes and cook for a couple of minutes before adding the garlic and herbs. Let cook for 10 minutes on med - low heat.
4. Mix the miso paste with the broth and then add to the pot. Lower the heat to a hard simmer and cover to cook for 15 minutes.
5. Using an immersion blender, blend the soup until completely smooth (it’s ok to see some of the herbs). Add in the orzo and feta and continue to simmer for 15 minutes.
6. Serve with additional fresh herbs and feta.
Note: For a thicker soup allow it to simmer an additional 15 -20 minutes on low heat. The orzo will continue cooking and thicken the soup.
