Summer Fruit & Silken Tofu Salad
Summer fruit salads are refreshing and delicious, but adding silken tofu takes them to another level. Not only does it boost the protein content, it also brings a delicate, custard-like texture that pairs beautifully with the juicy fruit. Everything is drizzled with a bright, tangy dressing with a subtle touch of umami and the fresh mint adds a cooling finish that enhances every bite. Light yet satisfying, this salad is perfect as a breakfast, snack, or simple dessert.
Serves 2
Ingredients
16oz (454g) fresh water packed Silken Tofu, chilled
1 Nectarine, sliced and chopped
1 Mango, cubed
3-4 Mint leaves, chopped
1/2 Tbsp Toasted Sesame Seeds
Dressing
(Mix all ingredients until emulsified)
Zest of 1 Lime
Juice of 1 Lime (about 2 Tbsp)
1 1/2 Tbsp (23ml) Maple Syrup
2 tsp (10g) Miso Paste
2 tsp (10ml) Toasted Sesame Oil
Directions
1.Make the dressing by combining all of the ingredients in a lidded jar. Shake vigorously or whisk until emulsified. Set aside.
2.Add the cut fruit to a bowl and toss with half of the dressing.
3. Carefully drain the tofu and invert it onto a shallow serving bowl. Cut the tips off two opposite corners of the plastic container to allow air in and help release the tofu. Lift away the container and discard the cut plastic pieces.
4. Leave the tofu whole or cut it into slices. Spoon the fruit mixture around the tofu and drizzle with the remaining dressing. Garnish with freshly chopped mint and toasted sesame seeds. Serve family-style or divide between two bowls.
