Greek Style Sheet Pan Gnocchi
This Sheet Pan Gnocchi Dinner is as easy to make as it is delicious. Everything roasts together on a single pan, creating a meal full of texture and flavor. The gnocchi becomes golden and crisp around the edges, while the garbanzo beans turn hearty and lightly roasted. The onions, peppers, and cherry tomatoes soften as they cook, with the tomatoes bursting to create a flavorful sauce mixed with the marinade and creamy vegan feta. Inspired by the flavors of a classic Greek salad, this recipe is endlessly customizable! Swap in your favorite vegetables, herbs, or cheese to make it your own.

Ingredients
18 oz (500g) shelf-stable Gnocchi
15.5 oz (439g) Garbanzo beans, rinsed and patted dry
1 Green Bell Pepper (200g), chopped into 1 inch pieces
1 Red Onion (225g), chopped into 1 inch pieces
12 oz (340g) Cherry Tomatoes, rinsed
3.5 oz (100g) Vegan Feta Cheese, crumbled
Juice of ½ Lemon
¼ cup (60ml) Olive Oil
3 Tbsp (45ml) Red Wine Vinegar
1 tsp (1.5g) dried Thyme
1 tsp (2g) chopped fresh Oregano (or 1.5g dried Oregano)
½ tsp (2.5g) Garlic Powder
½ tsp (2.5g) Salt
Pepper to taste
For Garnish
Fresh Oregano leaves, torn
Directions
1.Make the marinade by combining the oil, red wine vinegar, herbs, salt, and pepper. Whisk until fully combined and emulsified. Set aside.
2.Rinse and drain the garbanzo beans, then gently pat them dry. Remove as many of the outer skins as possible.
3.Add the garbanzo beans, chopped onion, chopped green pepper, cherry tomatoes, and gnocchi to a large bowl. Pour the marinade over the mixture and toss until evenly coated.
4.Spread the gnocchi mixture in a single layer on a lined sheet pan or in a large shallow baking dish. Bake at 415°F for 15 minutes. Flip the mixture and continue baking for another 15 minutes.
5.Remove the pan from the oven and crumble the vegan feta over the top. Return to the oven for 5 minutes, or until the cheese has softened and warmed through.
6.Squeeze the fresh lemon juice over the mixture and garnish with freshly torn oregano leaves. Serve immediately.
