Sautéed Mushrooms & Garlic Avocado Toast
This is not your typical avo toast. The buttery mushrooms & garlic add delicious texture and tflavor while the spicy tahni drizzle elevates this toast to another level!
Serves 2
Ingredients
4 slices of Bread, toasted
1 large ripe Avocado, mashed (do this right before serving)
2 cups (180g) sliced Mushrooms (any variety)
3 cloves Garlic, minced
2 Tbsp (30g) Vegan Butter
3 Tbsp (45 ml) runny Tahini
Red Chili Flakes or Chili Crisp to taste
1/2 Tbsp (7ml) Lemon Juice
Salt & Pepper to taste
Directions
1. Heat the vegan butter in a large pan on medium heat. Sauté the mushrooms until they release their water and are nicely browned. Add in the garlic and continue cooking until fragrant, about 1-2 minutes. Set aside.
2. Make the tahini sauce by mixing together the tahini, lemon juice, red chili flakes (or chili crisp) salt & pepper. Set aside.
3. Make the toast by toasting or grilling your bread. Spread a good amount of mashed avocado on each slice of bread.
4. Top with sautéed mushrooms and garlic and drizzle with tahini sauce.
