Salsa Fresca
This salsa is fresh, vibrant and bursting with flavor! It’s made with simple uncooked ingredients and blended until everything is very finely minced. It can be made mild or spicy and in just about 15 minutes. Enjoy it on everything from beans, tacos, burritos or just to eat with plenty of tortilla chips!
Serves 6
Ingredients
3 Vine Ripe Tomatoes (or use 4-5 Roma)
bunch of Cilantro (about 1/2 cup or more)
1/3 Red Onion
1 Jalapeño, stem & seeds removed
1 clove Garlic, peeled
Juice from 1 Lime
1/2 tsp Salt or more to taste
Notes
1.If you like your salsa spicy, remove the stem and use the entire jalapeño pepper including the seeds.
2.If you prefer a less watery salsa try removing the seeds from the tomatoes prior to blending.
Directions
1.Cut the tomatoes into quarters before adding to a food processor. If you prefer a more chunky salsa then you can remove the seeds and membranes before hand.
2.Roughly chop the onion and add it to the food processor along with half the cilantro, jalapeño (seeds removed) garlic, lime juice and salt .
3.Pulse until mostly chopped up. Add the remaining cilantro and continue pulsing until everything is very finely chopped or until desired consistency.
4.Serve with tortilla chips or use it to top tacos, burritos or however else you enjoy salsa.
Will keep for 5 days refrigerated in an airtight container.
