Roasted Veggies w/ Turmeric Thyme Honee Mustard
Roasted Veggies especially Asparagus and Thyme always make me think of Spring! The delicious Turmeric Thyme Honee Mustard is the best and will have you saying bring on the Veggies!
Ingredients
Any assortment of fresh Vegetables will work, I used the following:
Bundle of Asparagus
Large Zucchini
Large Red Potato
Head of Broccoli
Head of Cauliflower
For the Dip
1 1/2 Tbsp of Vegan Mayo I used Fabanaise
2 tsp of Dijon Mustard
1 tsp of Beefree Honee
1/4 tsp of dried Turmeric
1/4 tsp of dried Thyme (you can also use fresh)
1 Tbsp of Primal Foods Kitchen Lemon Turmeric Vinaigrette
(you can use any light italin dressing or use the following ingredients instead:
2 tsp of Lemon Juice,
1 tsp of Grape Seed or Avocado Oil )
Directions
1. Trim the Asparagus and cut up the rest of the vegetables into medium size pieces
2. Toss in a little bit of Oil (optional), Salt & Pepper and Roast at 375 for about 20-25 minutes or until everything is tender
3. Mix together the ingredients for the Mustard Dip and serve once Vegetables have cooled but are still warm
