Cauliflower Gratin

This is one of those dishes that you know is going to be good before you even make it. It’s creamy and delicious and so easy to make. It’s a nice switch from the more common Potatoes Au Gratin, it’s a little lighter and just as satisfying. You can enjoy it as is, or as a tasty side dish. Looking to stretch it out as a main dish? Serve it over Rice or mixed with cooked Pasta for the most delicious Cauli-Mac you’ve ever had!

Ingredients

1 large head of Cauliflower ( I used two smaller ones)

2 1/2 Tbsp of Vegan Butter

1/3 cup Flour

2 cups Plant Based Milk

1 cup grated Vegan Gouda ( I like Violife, Whole Foods and Follow Your Heart brands)

1/2 cup grated Vegan Mature Cheddar (I use Violife)

1 tsp of Garlic Powder

1 tsp of Thyme

1/4 tsp of Nutmeg

Salt & Pepper to taste

Topping:

1/2 cup grated Vegan Gouda

1/3 cup Panko Bread Crumbs

1 Tbsp of Vegan Butter melted

Optional: 1 Tbsp of chopped Parsley for garnish

Cauliflower Mac : Add 6 oz Pasta cooked according to package directions.

Directions

1. Cut the Cauliflower into florets and drop them into salted boiling water for a quick boil of 3 minutes. Drain and set aside.

2. Warm up the Plant Milk to a simmer while you prepare the Sauce.

3. In another pot on med - high heat melt the Butter. Once melted add in the Flour and mix well to form a paste like mixture. Add in the hot Plant Milk and whisk until well incorporated.

4. Allow the liquid to thicken slightly before adding in the 1 cup grated Gouda and 1/2 cup Cheddar. Keep wisking until creamy.

5. Add in the Thyme, Garlic Powder, Nutmeg, Salt, Pepper and continue to cook until smooth.

6. Pour about a 1/4 of the sauce on the bottom of a large baking dish. Add in the cooked Cauliflower and pour the remianing sauce over the top.

7. Mix together the Bread Crumbs, remaining 1/2 grated Gouda and melted Butter and sprinkle over the top

8. Bake at 375 for 30 minutes and then move it to the top rack of your oven to broil at 400 for 5 minutes or until golden brown. (keep an eye on as it could burn quickly)
