Miso Maple Cabbage Salad
This is an incredibly simple salad with just a few ingredients. The dressing is minimal and all together it’s crunchy, delicious and refreshing! It’s the perfect side salad or starter or when you just want a break from heavier meals. But, you can also pair it with your favorite plant protein to make it more substantial.
Serves 4
Ingredients
small head (550g) Red Cabbage, shredded or chopped
3 medium Carrots, peeled & grated
3 Green Onions, sliced thin diagonally (reserve about 1-2 Tbsp of the green parts for garnish)
1 Tbsp (15g) Toasted Sesame Seeds for garnish
Dressing
2 1/2 Tbsp (37g) Miso Paste
2 1/2 Tbsp (37g) Maple Syrup
2 1/2 Tbsp (37ml) Rice Vinegar
3 tsp (15ml) Toasted Sesame Oil
Salt & Pepper to taste
Directions
1.Make the dressing by combining the miso paste, maple syrup, rice vinegar and toasted sesame oil. Season with salt and pepper and mix well. Set aside.
2.Shred and slice all of the vegetables, then add them to a large bowl and mix well. Pour over the dressing and toss until well coated. Serve garnished with toasted sesame seeds and green parts of the onion.
