Herbed Chicken and Rice

I can’t begin to tell you how flavorful this dish is! It starts by cooking the Rice with Garlic and Vegetable broth which pairs perfectly with the crisp Chicken. This is definitely a delicious and comforting dish that you can make for 2 or easily double to feed an entire family.

Ingredients

1 Package of Vegan Chicken Drumsticks from All Vegetarian Inc. (you can use 8-10 oz of any type of unbreaded Vegan Chicken)

3 cups of Cooked Brown Rice ( I used a mix of Brown Jasmine and Wild Rice)

2 1/2 cups frozen Broccoli roughly chopped

1/2 cup Red Onion chopped

2 Garlic Cloves minced

2 Tbsp of Parsley chopped

1 Tbsp of Thyme chopped

2 tsp of Rosemary chopped

1 tsp of Poultery Seasoning

2 Tbsp of Vegan Butter

1 1/2 Tbsp of Flour

1 1/2 cup Vegetable Broth

Salt & Pepper to taste

Directions

1. Cook the Rice according to package directions with Vegetable Broth and 3 cloves of Garlic. Set aside

2. In a large skillet, sauté the Onion in the Butter on med - low heat until they start to take on some color.

3. Add in the chopped Herbs and Garlic and continue to sauté for a few minutes. Add the Chicken to the pan and brown on all sides.

4. Remove the Chicken and set aside. In the same skillet add the Flour to the Onions and Herbs and mix until well coated. Continue to cook for a few minute stirring occasionally.

5. Add in the Vegetable Broth and turn up the ehat to medium. Stir occasionally as it thickens then add in the chopped Broccoli and Rice. Mix well

6. Add the Rice mixture to a baking dish and top with the cooked Chicken. Cover with foil and bake at 350 for 35 minutes
