Lemony Garlic Chickpeas
This is a quick and delicious dish that cooks up in one pot. It’s full of great textures from the chickpeas to the chewy pearl couscous which can be easily swapped with orzo if you prefer. There is a ton of lemon flavor, fresh herbs and fresh greens. It makes an easy and comforting meal for two.

Ingredients
15.5 oz (439g) Chickpeas or Garbanzo Beans, drained and rinsed
1 cup (150g) Dry Pearl Couscous or Orzo
5 oz (142g) Fresh Greens (chard, spinach, or kale)
1 small (250g) Onion, diced
3 cups (710ml) Vegetable or Vegan Chicken Broth
6-8 cloves Garlic, minced
1 tsp Garlic Powder
1/8 tsp Turmeric (for color)
1 1/2 tsp (7.5g) fresh Thyme, chopped
1 1/2 tsp (7.5g) fresh Oregano, chopped
1 Tbsp (30ml) neutral Oil
Zest from 1 Lemon
Juice from 1/2 Lemon
Salt & Pepper
Optional: 1/3 cup crumbled Vegan Feta Cheese
Directions
1. Heat the oil in a large pan on medium heat. Add in the onions and sauté for 4-5 minutes or until translucent.
2. Add in the garlic and fresh herbs and cook for 2 minutes or until the garlic is fragrant. Season with salt & pepper.
3. Add in the couscous and cook for 2 minutes mixing to toast it. Add in the chickpeas, garlic powder, lemon zest, lemon juice and turmeric (if using) and mix well. Cover with 2 cups of the broth and bring to a soft boil. Lower the heat to medium low and cover the pot. Allow everything to cook for 5-8 minutes.
4. If the mixture seems dry or is sticking, add in the additional cup of broth. Add in the fresh greens and mix well. Cover the pot for a few minutes to steam the greens which will allow them to wilt.
5.Once the greens have wilted, mix well and remove from the heat. Check for seasoning and adjust with salt & pepper. Add the vegan feta on top or mixed in and serve warm.
