Creamy Parm, Potato & Asparagus Pizza

This is a wonderfully delicious and vibrant take on a white Pizza. I love using store bout Pizza Dough either fresh or frozen. It makes having a pizza night affordable and a good reason to use up on hand ingredients. The creamy Parmesan sauce is made with just a few ingredients and is super decadent tasting.

Ingredients

Ready made Pizza Dough ( I used frozen organic from Trader Joes)

2 Golden Potatoes w/ skin Sliced

1/2 cup Asparagus sliced

1 slice of Red Onion sliced into quarters

1/3 cup Raw Cashews

1/3 cup Plant Milk

1/2 tsp of Garlic Powder

1/2 tsp of Onion Powder

1/3 cup Vegan Parmesan ( I like Violife and Follow Your Heart)

1/4 cup Nutrional Yeast

Good Olive Oil to drizzle

Directions

1. Soak the Cashews in enough hot water to cover for at least 30 minutes.

2. While the cashews are soaking parboil the sliced Potatoes & Asparagus for 3 minutes and pat dry

3. In a high speed blender, combine the rinsed Cashews, Nutrional Yeast, Vegan Parmesan, Plant Milk, Garlic Powder , Onion Powder, Salt & Pepper and blend until thick and creamy without any lumps

4. Spread the creamy Parmesean sauce onto the Pizza Dough

5. Arrange the parboiled Potato, Asparagus & Onion slices onto the dough. Drizzle with Olive Oil

6. Bake the Pizza for 22 -25 minutes at 425 or until lightly browned
