Cherry Cobbler
Not only are Cobblers a great way to utilize fresh or frozen fruit but they also make an easy and delicious desert. I love using cherries when the weather turns hot becasue they definitely convey Summer. Other stone fruits such as peaches and plums do as well. This recipe really lends itself to any fruit so don’t count out the berries!
For extra yumminess add a scoop or two of vegan ice cream!
Serves 4
Ingredients
1 cup (125g) Flour
3/4 cup (150g) Cane Sugar plus 2 tsp (10g) to sweeten the Cherries if necessary
1 tsp (5g) Baking Powder
1/4 tsp of Salt
1 cup (236ml) Plant Milk
4 Tbsp (60g) Vegan Butter
1 1/2 tsp (7.5ml) Vanilla extract
20 oz (567g) frozen pitted Cherries or other fruit of choice
Tip: For a crunchy crust sprinkle a Tbsp of Sugar over the top before baking
Directions
1. Partially thaw the cherries if using frozen. Drain any liquid and taste for sweetness. If not sweet enough you can add 2 tsp of sugar to the cherries and mix well. Set aside.
2. To form the batter mix together the flour, sugar, baking powder and salt. Add in the milk and vanilla and mix until well combined. The batter should be pourable.
4. Set the oven to 350 degrees and add the vegan butter to the baking dish to melt (I used a cast iron pan).
5.Once melted, remove from the oven and pour the batter into the baking dish but do not mix.
6. Lay the cherries on top of the batter. Bake at 350 for 50-55 minutes or until golden brown.
7. Allow cobbler to cool slightly before serving with or without a scoop or two of vegan ice cream.
