Cheddar Bay Biscuits

I have to admit prior to going vegan I had never tried a Cheddar Bay Biscuit. Red Lobster wasn’t a restaurant I frequented at any point in my life so the opportunity never really presented itself! .However, why pass up the opportunity to make cheesy herb filled Biscuits? These are easy to make and are perfect with a bowl of soup, salad or cut one open slather on the vegan butter and enjoy!

Makes 10 Biscuits


 
 

Ingredients

2 Cups (240g) All Purpose Flour
1 Tbsp (15g) Baking Powder
1/2 tsp (2.5g) Salt
1 tsp (5g) Onion Powder
2 tsp (10g) Garlic Powder
1 1/2 tsp (7.5g) Old Bay Seasoning
2 tsp (10g) Sugar
2 Tbsp (30g) chopped Parsley
1 cup (237ml) Plant Milk
1 Tbsp (15ml) Apple Cider Vinegar
1/3 cup (76g) plus 2 Tbsp (30g) Vegan Butter, melted
2 cups (225g) Vegan Shredded Cheddar Cheese
Pepper to taste

Topping

2 Tbsp (30g) Vegan Butter, melted
1 Tbsp (15g) chopped Parsley
1/2 tsp (2.5g) Garlic Powder

Directions

1. In a cup, add the apple cider vinegar to the plant milk and set aside.

2. In a large bowl mix together the flour, baking powder, salt, spices and sugar.

3. Pour the melted butter into the milk before adding it to the flour mixture.

4. Gently stir to combine and before fully combined add in the cheddar cheese. Mix until all the dry ingredients have been incorporated.

5. Scoop out the biscuits onto a large baking sheet using a large spoon or ice cream scoop. Gently press each biscuit down so they are slightly less round.

6. Bake at 450 for 10 -13 minutes or until golden in color.

7. Mix together the melted butter, parsley and garlic powder and as soon as they come out of the oven, brush with the mixture and serve.
