California Club Sandwich
I grew up loving the Classic Club Sandwich. Haven’t really had a good one since going Vegan, until now! Thanks to so many new Vegan products coming out all the time it’s making it so easy and delicious to eat Vegan. Both the Chicken and Bacon are from an awesome company called All Vegetarian Inc. So why call it a California Club? The addition of the Avocado of course! You can leave it off but why would you!
Makes 2 sandwiches
Ingredients
6 pieces of Sandwich Bread toasted
1/3 cup (77g) Vegan Mayo
4 Slices of Vegan Bacon cooked
4 slices of Vegan Chicken browned and sliced or you can sub any Vegan deli style slices
4 Slices of Tomato
2 Romaine leaves sliced in half
1 Avocado sliced
Salt & Pepper to taste
Directions
1. Lay 3 slices of Toast out on a board at a time.
2. Slather each piece of toast with Vegan mayo.
3. Layer a piece of Lettuce, a slice of Tomato and a few slices of Avocado, season with Salt & Pepper. Then layer the Chicken and Bacon on top of the veggies.
4. Lay the 2nd piece of toast mayo side down, spread more mayo on the dry side and repeat the process from step three.
5.Use the third piece of Toast to top the sandwich, vegan mayo side down. Cut into four diagonal pieces and secure with a toothpick. Repeat the same steps for the 2nd sandwich.
6. Serve with Chips or Fries and Pickles on the side.
