Bleu Cheese Compound Butter
Compound Butters are an easy way to add so much flavor to any dish. Typically made with herbs, lemon zest or truffles. This compound Butter is a little bit extra with the addition of Vegan Bleu Cheese. It’s as easy as mixing together softened butter with herbs and cheese. That’s it! Add it to baked potatoes, grilled mushrooms, veggies or even on toast! I’ve included a quick recipe for a complete meal along with how to make the Bleu Cheese Compound Butter.
Compound Butter makes about 10 Tbsp
Ingredients
2 large Portobello Mushrooms
2 Russet Potatoes
1 bunch Broccolini
3 cloves Garlic sliced thin
2 Tbsp Avocado Oil
Salt & Pepper to taste
Marinade
1 Tbsp (15ml) Avocado Oil
1 Tbsp (15ml) Balsamic Vinegar
1 Tbsp (15g) Montreal or other Steak Seasoning
2 tsp (10ml) Vegan Worcestershire Sauce
few dashes of Liquid Smoke
Bleu Cheese Compound Butter to serve
Compound Butter
1/2 cup or 1 stick of Vegan Butter
1/2 cup Follow Your Heart Bleu Cheese Crumbles
3 Tbsp (45 g) of Parsley finely chopped
2 Tbsp (30 g) of Chives chopped
Pepper to taste
Compound Butter Directions
1. Allow the butter to soften at room temperature but not melt.
2. Add the butter to a bowl along with the bleu cheese and herbs.
3. Mix until well incorporated and then add the butter to a piece of parchment paper or plastic film.
4. Gently mold the butter into a log shape, cover and refrigerate overnight or until firm and ready to use.
Directions
1. Make the marinade by mixing together the avocado oil, balsamic vinegar, steak seasoning and worcestershire sauce.
2. Brush the underside of the mushrooms with marinade and place that side down onto a hot skillet or grill pan and allow it to cook for 4-5 minutes.
3.While the underside is cooking, brush the marinade on the top of the mushroom. Flip and cook another 3-4 minutes.
4. Cook the broccolini by sauteeing them on medium heat with 2 tsp of oil and the sliced garlic.
Serve with slices of Bleu Cheese Compound Butter
