Peanut Butter & Peanut Candy Cookies
Once you find a great cookie base it’s pretty hard to stop playing around with adding new ingredients and that my firends is how these deliciously decadent Peanut Butter Cookies with Peanut Candy were born! They have just the right amount of Peanut Butter flavor and are studded with crispy shelled, chocolate covered peanuts. It’s truly a texture experience you won’t want to miss!
Makes 12 large cookies
Ingredients
2 cups (250 g) Flour
1/2 cup (113 g) Vegan Butter (1 stick) at room temperature
1/3 cup plus 1 heaping Tbsp (95 g) Creamy Peanut Butter
3/4 cup (150 g) Light Brown Sugar
1/4 cup (50 g) Cane Sugar
1 tsp (5 g) Corn Starch
1 tsp (5 g) Baking Soda
1 tsp (5 g) Salt
2 tsp (10 ml) Vanilla
3 Tbsp (45 ml) Plant Milk
1 Flax Egg (1 Tbsp Flax meal mixed with 3 Tbsp Water)
5 oz (142 g) Vegan Dark Chocolate Peanut Candy (I used Unreal brand)
Directions
1. Make the flax egg by combining the flax meal with the water, mixing and then set aside for 5-8 minutes.
2. Cream together the butter and sugars for about 5 minutes or until fluffy and it becomes lighter in color.
3. Add in the flax egg, peanut butter, vanilla and plant milk and mix until combined.
4. In a large bowl mix together the flour, cornstarch, salt and baking soda. Slowly add it to the wet ingredients. Mix until combined.
5. Add in about half the bag and using a spatula mix through (helps prevent cracking any of the candy) Cover the dough and refrigerate for 30 minutes before baking.
6. Using a small scoop or tbsp, scoop out 21/2 - 3 tbsp of dough and gently pat it down into a circular shape. Place on a lined baking sheet about 3 inches apart. Gently push 2 -3 additional candies into the top of the cookie.
7. Bake at 350 for 12-15 minutes or until the edges are lightly browned. Let cool for 5 minutes before transferring to a wire rack. Allow them to completely cool before serving.
