Chicken Matzo Ball Soup
I grew up making Matzo Ball Soup along side my mom. As teenager I was Vegetarian so we would make two separate pots side by side and share the Matzo Balls.
As a Vegan, Matzo Balls were something I thought I wouldn’t be able to veganize. Some of my earlier attempts were “passable” because I just really wanted them! Thanks to innovative companies such Follow Your Heart & Just Egg making Vegan Eggs that are great in so many recipes I was able to finally make delicious Matzo Balls.
Serves 4-6
Ingredients
2 Med-Lg Carrots
3 Ribs of Celery
1/2 a Med Onion
Bunch of Fresh Dill
Vegan Chicken (I like Gardein or Tofurky Company)
2 cups Water
2 tsp @frontiercoop Poultry Seasoning
Salt & Pepper to taste
4 cups Veggie or No Chicken Broth

Directions
1. Make the Matzo Balls according to package directions. Substitute the Eggs in the recipe for Follow Your Heart Vegan Egg Mix. Cook them and set them aside to add to the soup
2. In a large pot, Saute the Onion, Carrot and Celery until onion is translucent. Add a bit of the fresh Dill and cover with Veggie Broth and let cook on med - low heat for 15-20 minutes
3. Season with Salt & Pepper and more chopped Dill. Add the Vegan Chicken that has been cut into small strips and continue to cook for 15 minutes
4. Add the Water, Matzo Balls and let cook until heated through about 20 minutes
