Black Bean & Roasted Corn Soup
I love Black Beans and Rice and sometimes it’s even better in a Soup! What makes this recipe a little different is the addition of the Sweet Roasted Corn. I recommend serving a big bowl with a scoop of Jasmine Rice, Avocado, more Cilantro and a bit of Vegan Sour Cream.
Serves 4
Ingredients
2 cans of Black Beans
4 Celery Stalks
1 medium Tomato
5 cloves of Garlic
1 Small Onion
Fresh Cilantro
2/3 cup Roasted Corn (you can find frozen)
2 tsp of Cumin
2 tsp of @bragglivefoodproducts Aminos
1 tsp of Hickory Salt (sub liquid smoke)
2 Bay Leaves
Bunch of Fresh Cilantro
5 cups of water
Salt & Pepper to taste
Directions
1. Sauté the Onion, Garlic and Celery until Onion is translucent
2. Add in Black Beans, Roasted Corn, chopped Tomato, Cilantro and seasonings and let simmer for 10 minutes
3. Add in Bay leaves and cover with water
4. Lower heat to med low and let simmer for 25-30 minutes
5. Serve with Avocado, Fresh Cilantro, Rice and Sour Cream
