Tomato Basil Bisque
Bisque is a fancy (French) word for creamy soup. This soup is so satisfyingly smooth and delicious you’ll call it your favorite Tomato Soup recipe. It’s made with simple ingredients and it’s easy to make. Serve a big bowl on it’s own or with a yummy Grilled Cheese Sandwich. Shown here is a Caprese Grilled Cheese made with Miyoko’s Mozzarella, Fresh Tomatoes, Basil and a drizzle of Balsamic Vinegar.
Serves 2 - 4
Ingredients
28 oz can of Organic San Marzano Tomatoes
1 rib of Celery
1 medium Carrot
1 cup of chopped Onions
3 cloves of Garlic
1/3 cup chopped Basil
1 Tbsp of Thyme
2 tsp of Date Syrup (you can use any sweetener)
1 cup of Water
1 cup of Raw Cashews ( I use Terrasoul Milk Cashews)
1 cup unsweetend Plant Milk ( I use Cashew Milk)
Salt & Pepper to taste
Directions
1. Soak the Cashews in Hot Water for at least 30 minutes. Rinse and blend with 1 cup of Unsweetend Plant Milk until completely smooth. Set aside.
2. Sauté the Onion, Celery and Carrot until the onions are translucent
3. Add in the Tomatoes, Garlic, Basil, Thyme and 1 cup of Water. With a wooden spoon, gently break apart the Tomatoes. Cover the pot and bring to a medium boil for 25- 30 minutes.
4. Blend the Tomato mixture using an immersion blender or traditional blender until completely smooth.
5. Add in the Cashew Cream and Date Syrup, mix well and lower the heat and simmer for 10 - 15 minutes.
6. Serve with croutons or with a Grilled Cheese to dip in.
