Take 5 Chocolate Date Bark

Certain recipes go viral and you see them popping up every where. Here’s your sign to make this but with a twist. This is my recipe for chocolate date bark with pretzels that mimic a Take 5 Bar. The TAKE 5 Bar is five layers of sweet and salty goodness. It’s salty pretzels, smooth peanut butter, crunchy peanuts and sweet caramel and all covered in a chocolaty coating.

The entire appeal of chocolate date bark is that is mixes the classic salty and sweet flavors together but in a less processed and healthier way. I am not saying that this treat is healthy but it certainly is less processed than a candy bar and made with just a few healthier ingredients.

Ingredients

12 soft Medjool Dates pitted
3 heaping Tbsp Unsweetend Peanut Butter
1/4 cup Roasted Peanuts chopped
8 oz (250g) Vegan Dark Chocolate Chips
1 tsp (5g) Coconut Oil
1 1/2 cups (190g) Mini Pretzels Twists
Optional: Flaky Salt for topping

Directions

1. Place all of the dates close together onto a parchment lined baking sheet. Cover them with another piece of parchment and use the bottom of a glass or rolling pin to mash them down. This will soften them up. make the texture gooey and more caramel like.

2. Spread the peanut butter over the layer of smashed dates. Sprinkle a layer of chopped peanuts.

3. Place a layer of the pretzel twists on top and using your hands, gently press them into the layers beneath. Set aside to melt the chocolate.

4. Add the chocolate chips and coconut oil to a bowl and place in the microwave. Heat for 2-3, 30 second increments, be sure to stir in-between. Heat until almost fully melted. The residual heat and a good mix will finish the melting process.

5. Spoon the melted chocolate over the date mixture, making sure to cover all of the layers and edges. Place the baking sheet into the freezer for 30-45 minutes or until the chocolate sets.

6. Once the bark is hard remove from the freezer and either break it apart with your hands or use a sharp knife to cut into pieces. Store any leftovers in an air tight container in the refrigerator or freezer.
