Spinach & Pine Nut Fried Rice
Inspired by a dish we recently had (twice!) from Enjoy Vegetarian Restaurant in San Francisco. It was so different and delicious that I thought I’d recreate it and share the recipe here. It’s simple to make and really delicious. It’s lighter than most fried rice dishes which is nice. I also included the option to add spice if that’s your thing!
Serves 4
Ingredients
2.5 cups (500g) cooked White Rice (i used Organic Long Grain)
5 oz (175g) Baby Spinach finely chopped
1/3 cup (45g) Pine Nuts lightly toasted
2 tsp (10ml) Toasted Sesame Oil
2 tsp (10ml) Soy Sauce
2 tsp (10ml) Rice Vinegar (I like Marukan)
Salt & Pepper to taste
For heat: add 1/2 - 1 tsp (3-5g Chili Paste
Directions
1. In a warm pan spread the pine nuts in one layer. Gently move them around until they start to become aromatic or change color. Set them aside .
2. In a food processor pulse the baby spinach until finely chopped
3. Sauté the spinach in the sesame oil and add the soy sauce & rice vinegar as it’s cooking. Season with salt & pepper to taste.
4. Once the spinach has cooked down, add in the cooked rice and mix very well until completely incorporated.
5. Lastly, add in the pine nuts and cook everything for a few minutes until heated through making sure to keep stirring.
