Orange Cranberry Cornbread
This is a sweet take on tradtional cornbread that’s perfect for the holiday season. Slightly sweet and deliciously tart it will be the perfect side to any Holiday meal. It’s so easy to make that you won’t be waiting for the holidays to make it. A nice square goes perfectly with some butter and a cup of tea or coffee.
Makes 9 squares (depending on the shape / size of the baking pan)
Ingredients
1 1/4 cup All Purpose Flour
1 1/4 Organic Cornmeal
3/4 cup Organic Vegan Sugar
1 Tbsp of Baking Powder
1 tsp of Salt
Zest of an Orange
1/2 cup Unsweetened Plant Milk
3/4 cup Orange Juice
1/3 cup Organic Canola Oil
1 cup frozen Organic Cranberries
( chopped)
1 Tbsp of Vegan Butter for greasing the baking pan
Directions
1. Mix the Dry ingredients together in a large bowl and set aside
2. Roughly chop the Cranberries while frozen slowly with a chef’s knife, gently rocking back and forth. Set aside
3. Mix together the wet ingredients and Orange Zest and pour the mixture into the bowl of dry ingredients
4. Mix well making sure to completely incorporate the liquid into the dry but don’t over mix
5. Add in the Cranberries and mix well
6. Pour the mixture into a well greased 9x9 or 10x10 pan or baking dish
7. Bake at 400 for 25 minutes or until a toothpick comes out clean.
