KFC Copycat Coleslaw

This sweet and crunchy slaw is exactly as I remember it. It’s on the sweeter side, finely chopped and slightly tangy. There are so many yummy variations of coleslaw, creamy, sweet, vinegary and spicy. If you ever enjoyed KFC’s sweet and creamy coleslaw than you’ll love this completely vegan one! It’s incredibly nostalgic and easy to make. Perfect side dish to any lunch or dinner. It’s also essential potluck or picnic food.

Ingredients

1 medium head (700g) Green Cabbage, finely chopped
1 medium Carrot, shredded and chopped
3 Tbsp (45g) Onion, grated
1/2 cup (115g) Vegan Mayo
1/3 cup (65g) Cane Sugar
1/4 cup (59ml) Plant Milk
3 Tbsp (45ml) Lemon Juice
1 1/2 (23ml) Tbsp Rice Vinegar (you can sub apple cider vinegar)
1 tsp (5g) Salt
1/4 tsp Pepper or more to taste

Directions

1.To a large bowl, add the vegan mayo, sugar, plant milk, lemon juice, rice vinegar, salt & pepper. Mix until well incorporated. Set aside.

2.Finely chop the cabbage by hand or with a food processor and add it to the bowl with the dressing. Peel and grate the carrot. With a knife, chop the carrot a little finer and it to the cabbage mixture.

3. Finely add the grated onion and mix until everything is well coated. Refrigerate for a couple hours to allow the flavors to meld.

4. Enjoy as a delicious sweet and crunchy side for sandwiches or hot meals.
