Honey Miso Ginger Dressing
I love the dressing from my favorite sushi restaurants. I’ve bought several types from the grocery store but they never taste as fresh or have extra ingredients that i don’t care for. So I’ve been making my own for some time now and thought I’d share how easy it is to make. This calls for Vegan honey which is becoming more available but feel free to sub maple syrup or agave if you can’t find any. I also like to make a variation of this dressing by adding in fresh carrots. It’s obviously great on salads and I also love it on warm brown or white rice. It’s so good!
Makes a cup of dressing
Ingredients
2” knob of Ginger peeled
1 slice of Onion (any variety)
1 -2 cloves of Garlic
5 Tbsp (75ml) Rice Vinegar
5 Tbsp(75g) Miso Paste
3-4 Tbsp (45-60g) Mellody Vegan Honey (sub agave or maple syrup)
2 Tbsp (30ml) Soy Sauce
2 Tbsp (30ml) Toasted Sesame Oil
1/4 cup (59ml) Water (more as needed)
Salt & Pepper to taste
Optional: add 1 small carrot
Notes
1.for a thicker dressing start with less water and add as you go
2. Ginger can be very fibrous so if this is bothersome to you, you can grate it first or strain the dressing before bottling.
Directions
1. Add all of the ingredients to a blender and blend until smooth. Add more water if needed to thin to desired consistency.
2. Enjoy it on salads or try it on warm rice.
3.Store in an airtight containner refrigerated for up to 10 days.
