Herby White Bean Salad
Bean salads aren’t just practical, they’re craveable! This herby white bean salad is bright, fresh, and deeply satisfying with creamy beans, crisp celery, and tangy plant based feta in every bite.
A generous handful of fresh herbs, a squeeze of lemon, and a drizzle of good olive oil brings everything to life. It’s the kind of dish that gets even better as it sits, making it perfect for savory breakfasts, easy lunches, quick snacks, or light dinners throughout the week. Enjoy it on its own or scoop it up with warm, grilled bread for something extra comforting.
Serves 4-6
Ingredients
30oz (878g) Cannellini or other White Beans, drained and rinsed
3 ribs Celery, diced
3 Green Onions, sliced thin
1/2 cup (75g) thinly sliced Red Onion
1 cup (75g) crumbled Vegan Feta
1/3 cup (20g) chopped Parsley
1/3 cup (15g) chopped Dill
handful Mint Leaves, torn or roughly chopped
1/4 cup (60ml) Good Olive Oil
Zest of 1 Lemon
4-6 Tbsp (60-90ml) Lemon Juice (about 2 Lemons)
1/2 tsp Salt or more to taste
Black Pepper to taste
Directions
1.Add the rinsed beans to a large bowl along with the chopped celery, sliced green onions, sliced red onion, fresh herbs, and lemon zest. Mix well.
2.Dress the salad with the lemon juice and olive oil, then season with salt and pepper.
3.Add the crumbled feta and gently toss to combine. Enjoy as is or serve with grilled bread. The salad will keep in an airtight container in the refrigerator for up to 5 days.
