Haluski - Cabbage & Noodles

Pronounced ha-LOOSH-key, refers to the cabbage and noodle dish that's cooked in a generous amount of butter. It’s a Polish (as well as Ukrainian, Slovakian and Romanian) comfort food that's incredibly easy to make and consists of just four simple ingredients. I like to add garlic so make that five simple ingredients! The onions and cabbage lend a subtle sweetness to the luscious buttery noodles. It’s quick, easy, and filling and can be served as a side dish or as the main course. For a dish with just a few ingredients you’ll be amazed at how delicious it is.

Halusky - is a similar Slovakian version made with dumplings and most likely was the predecessor to this one made with “egg” or wide noodles.

Serves 2-3


 
 

Ingredients

8oz (227g) Wide Noodles
1 small head of Cabbage (about 1 lb or
1 medium (200g) Onion cut root to stem
3-4 Tbsp (45-60g) Vegan Butter
4 cloves Garlic minced
Salt & Pepper to taste

Note:
Prep the cabbage by cutting it in half and removing as much of the core as possible. Turn the cabbage cut side down and slice the cabbage thinly into shreds.

Directions

1. Melt the vegan butter in a large skillet on medium low heat. Add the onions and sauté them stirring occassionally for 10 minutes or until they take on a golden color.

2. Bring a large pot of water to boil and cook the pasta according to package directions.

3. Add the shredded cabbage to the onions and mix well. Sauté for 7 -10 minutes or until the cabbage becomes soft but retains it’s green color.

4. Season with salt & pepper and add in the garlic. Cook for a few minutes before adding in the cooked pasta. Mix well and allow everything to heat through. Check for seasoning and adjust with more salt & pepper if needed. Serve hot and enjoy.
