Black Bean Tofu Bake

This is a super flavorful almost sheet pan dinner. I say almost because you could stop once it’s all baked on a sheet pan but I like to turn it into a casserole. Once everything has cooked it’s added to a layer of rice and cilantro cream and a bit of vegan cheese. It all comes together in one delicious dish. It’s easy to make and perfect for any night of the week.

Serves 4-6


 
 

Ingredients

16oz (454g) Extra Firm Tofu
30oz (850g) canned Black Beans rinsed & drained
3 cups (400g) cooked Rice (any variety)
1 Medium Red Bell Pepper
1 Medium Green Bell Pepper
1 Medium Onion sliced root to stem (half moons)
1 Jalapeño
4 cloves Garlic
2 Tbsp (30ml) Avocado Oil
1 1/2 tsp (7.5g) Adobo Seasoning
1 tsp (5g) Cumin Powder
1 tsp (5g) Onion Powder
1/2 tsp (2.5g) dried Oregano
Salt & Pepper to taste
Optional: 1 cup (100g) Vegan Cheese shreds of choice

Cilantro Cream
2/3 cup Raw Cashews soaked and rinsed
1 bunch fresh Cilantro (40g)
2/3 cup Water (plus more if needed)
Juice from 1 Lime
1 clove Garlic
Salt & Pepper to taste

Directions:
1.Soak the cashews in hot water for 20 minutes. Drain and rinse them then add to a blender along with the cilantro, garlic, lime juice, salt, pepper and water.

2. Blend until completely smooth and creamy. Add more water if needed to get desired consistency.

Nutfree option: Substitute vegan sour cream for the cashews and add 1/3 the amount of water.

Directions

1. Prep the tofu by cutting it into 1 “ cubes (press it for 15 minutes first if using water packed) and lay it out on a lined baking sheet.

2. Prep the red and green peppers by removing the seeds and giving them a rough chop. Remove the seeds from the the jalapeño and finely dice it. Cut the onion into half moons by cutting it in half then slicing from root to stem. Crush the garlic with a press. Add all of this to the baking sheet with the cubed tofu.

3. Drizzle everything with oil and add the spices. Mix well. Bake at 375 for 20 minutes.

4.Once the tofu and veggies have baked add the black beans and mix well.

5. Make the casserole by adding a couple tbsps of the cilantro cream to the bottom of a baking dish. Add the cooked rice then layer half of the bean & tofu mixture and 1/3 of the cilantro cream. Add in half of the cheese and repeat. Save the remaining cilantro cream to serve.

6. Cover the casserole with aluminum foil and bake at 350 for 25-35 minutes or until heated through and the cheese has melted.

7. Serve with cilantro cream, lime wedges, your favorite hot sauce and plantain chips.
