Quiche Lorraine

Can a classicly French dish such as Quiche Lorraine be made Vegan? Sure it can! A buttery Pastry crust stuffed with Eggs, Bacon and Cheese is easily veganized and just as delicious. I added a little bit of baby Spinach for color but you can leave it out. Not feeling the Vegan Bacon? Then add Tomatoes and Dill, or Spinach and Mushrooms. The options are endless. Quiche is perfect for Breakfast, Brunch or even Dinner. Add a litle side of Salad to complete a meal.

Ingredients

1 premade Pie Crust ( I like Wholly Wholesome)
12 oz (355ml) Vegan Liquid Egg
1 cup (234g) Vegan Cheddar Chesse shreds
1 cup (30-40g) Spinach roughly chopped
6 slices Vegan Bacon cooked and chopped ( my favorite is All Vegetarian Inc)
1/2 cup (75g) Onion diced
Pinch of Nut Meg
Salt & Pepper to taste

Directions

1. Cook the Vegan bacon, chop and set aside.

2. Saute the onion until translucent, about 4-6 minutes. Add the spinach until wilted and season with salt, pepper and nutmeg.

3. Add the chopped vegan bacon to the spinach and onion mixture and set side to cool slightly.

4. Fill the pre baked pie crust by alternating layers of the cheese shreds and bacon spinach mix. Pour the vegan egg over the entire filling.

5. Lightly cover with aluminium foil (to protect the crust from burning) and Bake at 350 for 55-65 minutes.
