Jalapeño Cheddar Tofu Scramble

I love Tofu Scrambles because they are quick, delcious and you can easily change up the flavors. It’s also a great way to make a clean out the fridge meal! This Scramble is served with Smokey Oven Roasted Tomatoes and a Gardein Breakfast Sausage Patty.


 
 

Ingredients

1 Block of Extra Firm Tofu

2 Slices of Vegan Cheddar Cheese or Shreds ( I like Good Planet Foods & Follow Your Heart)

2 cups of chopped Baby Spinach

2 tsp of chopped Jalapeños

1/2 tsp of Kala Namak ( black Salt)

1/2 tsp of Turmeric Powder

1/2 tsp of Onion Powder

1/2 tsp of Garlic Powder

1/2 tsp of Smoked Paprika

Salt & Pepper to taste

1 -2 Vine Ripe Tomatoes

Smoked Salt

Gardein Breakfast Sausages

Directions

1. Drain the Tofu and let it sit for about 10 minutes to continue draining

2. Mash the Tofu with a Fork until desired consisitency or resembles scrambled eggs

3. Add in the Spices (except the smoked salt) and Jalapeños and mix well

4. Cook the Tofu mixture on med - high heat in just a little bit of oil or vegan butter until the mixture starts to dry or begins to brown

5. Add in the chooped Spinach and continue to cook until spinach starts to wilt.

6. Chop up the slices of Cheddar Cheese and add it to the Tofu. Cook until cheese is melted

7. Cook the Sausage according to package directions

7. Slice the Tomatoes and season with Smoked Salt and Pepper. Broil them at 475 for about 5 minutes or until nicely roasted
