Elote Popcorn

Everyone loves a big bowl of Popcorn. This version is a fun and delicious take on the Mexican street style corn called Elote. Every bite is salty, tangy, slightly spicy and perfectly cheesy. There is so much flavor so dig in and don’t be afraid to get your hands messy!

Serves 2


 
 

Ingredients

1 1/2 Tbsp of Coconut Oil

1/3 cup of Organic Popcorn kernels

1/2 cup grated Vegan Parmesan Cheese ( I like Follow Your Heart and Violife)

Tajin Seasoning to taste (Trader Joe’s makes a Chili Lime seasoning too)

1 1/2 Tbsp of Vegan Butter ( I used Miyokos)

2 tsp of Follow Your Heart Vegenaise

1/4 cup Cilantro finely chopped

Salt to taste

Serve with Lime wedges

Directions

1. In a covered pot, on medium heat, melt the Coconut Oil with 2-3 popcorn kernels

2. Once the test kernels pop, remove the pot from the heat for about 60 seconds then add the remaining kernels and give the pot a good shake.

3. Cover the pot and return to the heat and shake periodically as the kernels begin to pop. Lift the corner of the lid every so often to allow for steam to release

4. Melt the Butter and mix in the Vegenaise. Stir until combined (it’s ok if it’s not completely smooth)

5. Add the popcorn to a large bowl and add in the Butter / Mayo mixture. Toss well

6. Add in the grated Cheese, Cilantro and Tajin Seasoning and mix well before serving
