Elote

Also known as Mexican Street Corn is a super easy way to dress up your corn! It’s so full of flavor that you’ll never go back to eating boiled corn with butter again. It’s an awesome Summer recipe but you can make it all year round using a cast iron pan to grill.

Serves 2 -4


 
 

Ingredients

4 Ears of Organic Corn

1/3 cup Follow Your Heart Vegenaise or Vegan Mayo

1/2 cup Grated Parmesan ( I like Follow Your HEart and Violife brands)

1/3 cup chopped Cilantro

Tajin Seasoning to taste ( about 2 Tbsp)

Fresh Lime wedges to serve

Directions

1. Boil the corn for about 5-7 minutes until just tender

2. In a hot cast iron pan, grill the corn until there are nice roasting / grill marks. About 1-2 minutes on each side

3. Coat with a thick layer of Vegenaise

4. Season with Tajin Seasoning, Parmesan and chopped Cilantro

5. Serve with fresh Lime wedges

Tip: pulse the Parmesan in a food processor until light and fluffy
