Miso Soup

Miso Soup is seriously a cure all for when you’re not feeling well. I like to call it life giving! I’ve been making this version with fresh Ginger for awhile now and can’t imagine it without. I always keep a tub or two of Miso Paste in the fridge. It’s not only great for whipping up Miso Soup but can be used to add Umami flavor to so many things like salad dressings, mac and cheese, and roasted veggies.

Ingredients

2 Tbsp of @coldmountainmiso Mellow Red Miso Paste ( I typically use mellow white)

Knob of Ginger sliced thin or chopped

1 Tbsp Wakame Flakes

Green Onion sliced thin

8 oz Firm Organic Tofu cut into cubes

3 cups Water 

Directions

1. Dissolve the Miso Paste in a little bit of water on medium- low heat

2. Add the chopped Ginger, Wakame flakes and Water to the miso mixture and let simmer 10 minutes

3. Add the Tofu, chopped Green Onions and continue to simmer until soup is completely heated through and the Ginger has softened
