Udon Noodle Bowl

I love all kinds of noodles in broth but there’s something so yummy about the chunky chewiness of fresh Udon noodles! Noodle bowls are a great way to use up ingredients that you have on hand. Customize them with the veggies you like and add in plant proteins like Tofu, Vegan Chicken, Seitan etc. The broth is easy to make and has so much flavor! You may need to visit your local Asian market for some of the more specialty ingredieints but it’s so worth it and any well stocked pantry should include them.

Ingredients

(2) 7 oz packages of fresh or frozen Udon Noodles

4 Baby Bok Choy rinsed well

1 package of Enoki Mushrooms broken into clusters

1 Green Onion sliced

6-8 Tofu Puffs cut in half (found in Asian markets refrigerated aisle) You can also sub any kind of Tofu or other plant protein

2 Tbsp of Toasted Seame Oil

Black Sesame Seeds for garnish

Broth:

4 cups of hot Water

1 1/2 Tbsp of Miso Paste (I use Cold Mountain Miso)

1 Tbsp of Toasted Sesame Oil

2 tsp of Umami Seasoning or Mushroom Powder (Trader Joe’s makes one)

3” piece of Kombu Seaweed

1 tsp of Mirin or Sake

1 tsp of Rice Vinegar

2 tsp of Black Vinegar (found at Asian market) You can just add more Rice Vinegar

1/2 tsp of Garlic Chili Oil

1 Tbsp grated Ginger

2 tsp of Shaoxing Wine or Chinese Cooking Wine (found at Asian market)

Directions

1. Make the Broth in a medium size pot by combining the Miso Paste, Water, Ginger, Rice & Black Vinegars, Toasted Sesame Oil, Chili Oil, Mushroom Powder, Mirin, Cooking Wine and Kombu. Bring to a boil, remove the Kombu after 3-5 minutes and then let simmer on low until ready to serve.

2. Lightly sauté (each separately) the Bok Choy, Enoki Mushrooms, Green Onion and Tofu Puffs in the Toasted Sesame Oil and set aside.

3. Cook the Udon Noodles according to the package directions and drain until ready to serve.

4. Assemble the bowl by adding a portion of Udon, each of the Vegetables and pour the broth in and around everything. Top with Sesame Seeds and condiments such as Sambal or Chili Oil .
