Tteokbokki - Stir Fried Rice Cakes
Tteokbokki is a very popular Korean street food and an ultimate comfort food. The long cylindrical rice noodles that are used are called tteokmyeon (떡면; "rice cake noodles"). Stir fried together with Veggies and an amazing spicy sauce they become perfectly chewy and oh so delicous! This dish is super easy to make and to eat!
This recipe is slighlty adapted from The Korean Vegan
Serves 2
Ingredients
8oz or 1/2 package of Korean Cylindrical Rice Noodles (find them at many Asian markets either frozen or refrigerated)
1 1/2 Tbsp Toasted Sesame Oil
1/2 Onion sliced thin
4 cloves of Garlic minced
1/2 medium Zucchini sliced into half moons
3 Green Onions sliced
6 dried Shiitake Mushrooms
1 small piece of Kombu Seaweed ( about 2”)
1 1/4 cups Water
Salt & Pepper
Optional: 1 tsp of Toasted Sesame Seeds for garnish
Cooking Sauce
1 1/2 Tbsp Gochugaru or Korean Chili Flakes
2 Tbsp of Gochujang Paste
2 Tbsp Dark Soy Sauce (you can use regular Soy Sauce)
2 1/2 Tbsp of Maple Syrup
Directions
1. In a large bowl, toss the Rice Noodles with 1/2 Tbsp of Toasted Sesame Oil and a bit of Salt & Pepper. Set aside while you prep the rest of the ingredients (if using frozen let them thaw first)
2. Soak the dried Shiitakes and Kombu in 1 1/4 cups hot Water for 20 minutes. Slice the Shiitakes and reserve the liquid
3. Mix together the ingredients for the cooking Sauce and set aside.
4. On med - high heat, in 1 Tbsp of Toasted Sesame Oil sauté the Onions and Shiitakes until Onions become translucent.
5. Add in the Zucchini, Green Onions and Garlic and cook until Zucchini becomes slightly soft
6. Add in the Rice Noodles and Sauce. Coat well and cook for 2 minutes before adding the Mushroom Broth (with Kombu removed)
7. Bring everything to a boil and then turn down the heat to simmer
8. Cover and let simmer, stirring ocassionally until sauce has thickened. About 5-8 minutes.
