Tofu Feta Phyllo Parcels

These crispy little parcels of phyllo are pleasantly salty, sweet and filled with tangy tofu feta. They are delicious and incredibly easy to make. Phyllo can be delicate but it’s also quite forgiving in this recipe. They are served warm with vegan honey that is mixed with Aleppo pepper for a subtly sweet heat. They make the perfect snack or appetizer.

Makes 16 parcels


 
 

Ingredients
14oz (397g) Extra Firm Tofu, pressed
16 sheets Phyllo Dough, thawed
1/3 cup (114g) Vegan Honey or Agave
4 Tbsp (60g) Vegan Butter, melted
1/2 - 1 tsp (2.5-5g) Aleppo Pepper (or more to taste)
2 Tbsp (30g) Toasted Sesame Seeds
2 Tbsp (30g) Nigella Seeds

Tofu Feta Mariande
1/2 cup (118ml) Lemon Juice (juice from 2 small Lemons)
2 Tbsp (30ml) good Olive Oil
2 Tbsp (30ml) Rice or Apple Cider Vinegar
2 Tbsp (30ml) Brine from either Greek Olives or Pepperoncini
3 Tbsp (45 ml) Water
2 Tbsp (30g) chopped fresh Oregano
1 1/2 tsp (7g) Salt
White Pepper to taste

Directions

1. Press the tofu for 30 minutes then slice it into 8 slabs. Cut each slab into two long pieces.

2.Mix together the ingredients for the marinade in a container with a tight fitting lid. Add the tofu sticks and make sure they are covered with the marinade. For the best flavor, refrigerate the tofu for 24 hours.

3. When the tofu is ready, remove it from the container andplace it onto a kitchen or paper towel to absorb any excess marinade.

4. Make the phyllo parcels by taking a single sheet of phyllo dough and lay it on a clean surface. Brush the top of the sheet with melted butter.

5.Place one piece of the tofu feta at the end closest to you. Wrap the end of the phyllo over the tofu and roll it away from you. Fold over each side of the phyllo as you continue rolling away from you. Brush with a bit more butter if the phyllo is dry and wrap until the tofu is covered and you have a little parcel. Continue until you have wrapped all of the tofu.

6.Place the parcels onto a lined baking sheet. Brush the tops with more melted butter and sprinkle some with toasted sesame seeds and some with nigella seeds. Bake at 375 for 15-17 minutes or until golden in color.

7.Mix together the vegan honey and Aleppo pepper. Drizzle it over the warm tofu feta parcels and enjoy.

Optional: heat the honey before drizzling.
